Chicken Drumsticks with Mushroom & Tomato

An easy, yummy weeknight dinner

Serves: 4

Prep Time: 10 min

Cook Time: 40 min

Approx Cost: $3 per person


1 tbsp olive oil

1 medium onion, finely diced

1 clove garlic, crushed

6-8 chicken drumsticks (organic, if possible)

2 lge handfuls mushrooms, chopped

300g tomato passata

1 tbsp dried oregano

1 bunch broccolini, steamed & chopped

1 lge handful fresh parsley, finely diced


  1. Heat olive oil in a large heavy-based pan over a medium heat

  2. Brown onion and garlic until soft

  3. Add chicken and cook turning frequently until lightly brown on outside

  4. Stir in mushrooms and cook for a few minutes

  5. Add passata and oregano, bring to the boil

  6. Reduce to a simmer with lid on and cook for further 25-30 minutes until chicken cooked through and no longer pink on the inside.

  7. Add broccolini and parsley, cook for a further few minutes

  8. Serve with brown rice
