Noodles in a Pot

Check out this great alternative to the highly processed, chemically filled Pot Noodle. It’s cheaper, and simple to make!

Serves: 1

Approx Cost: $1.50 per person

Prep Time: <5 min

Cook Time: 5 min


Large handful of brown rice noodles, broken up

Approx. 1 cup good quality chicken stock (homemade is best, otherwise look in health food shop or choose carefully from supermarket)

Approx ½ cup frozen carrot, pea & corn

1 tbsp finely chopped parsley

Salt & Pepper to taste


  1. Put noodles & vegetables in a small saucepan. Cover with chicken stock and bring to the boil over a medium heat.

  2. Reduce to a simmer until noodles are soft

  3. Stir in parsley, salt and pepper.

  4. Pour into a ‘pot’ e.g. small thermos (for lunch later), bowl or large mug. Enjoy!

You can also add (during point 1) small strips of cooked chicken or fresh vegetables of your choice (diced) or flavour further with chilli flakes, ground turmeric, garlic or onion powder.
